Tapioca Snack Recipes (Cassava/Yuka/Kuchi Kelangu Snacks)

Tapioca (Yuka or Cassava roots) is locally called as Kuchi kelangu in Tamil Nadu, India.

It is a tasty and healthy ingredient used to make a variety of delicious snacks. I have listed my favorite recipes for cooked tapioca tubers and tapioca chips in this post.

Fun Fact: Sabudhana is a starch extracted from these tapioca tubers 🙂

Tapioca snacks

1. Cooked Tapioca

This is the most easiest and healthiest recipe of all the snacks made with tapioca. It is also a very stomach filling dish which can be made in a short time.

Ingredients

  1. Tapioca tubers
  2. Salt – as needed
  3. Tempering items (check the process in my earlier post)

Method

  • Peel the skin and wash the tapioca tubers.
  • Simply cut them into small pieces and cook using a pressure cooker.
  • Temper the cooked tapioca and add salt to taste, and you are good to go!

2. Tapioca Chips

Tapioca chips are famous worldwide and are favored over potato chips by the calorie-conscious folks. These chips are also very easy to make.

Ingredients

  1. Tapioca tubers
  2. Salt – as needed
  3. Chilli powder – as needed
  4. Cooking oil – 300 ml

Method

  • Peel the skin and wash the tapioca tubers.
  • Grate the tubers using a long-bladed grater to obtain chip shaped thin slices.
  • Heat the cooking oil in a deep-bottomed vessel.
  • Fry the tapioca slices till they turn crisp (about 1 minute or so)
  • Let the chips cool and then sprinkle salt and red chilli powder over them.

The best thing about these chips is that they don’t retain much oil even though they are deep-fried.

You can roll them gently in tissue paper and whatever oil is remaining would get absorbed by the paper.

3. Kuchi Kelangu Vada

Did you know that tapioca flour (starch) is also available these days? You can use it as a thickening agent and to make cakes too! Yummy chocolate cake can be baked without using all-purpose flour if you use this.

  1. You’ve expanded my horizons! I’ve never cooked with tapioca before, (I don’t think I’ve eaten it before!) and now I really want to give it a try!
