Arisi muruku, made of rice flour is a delicious snack traditionally made at Deepavali festival time in South India.

It is a tasty treat for children and adults alike and is a healthier snack compared to other deep fried items.
Arisi muruku is easy to make with very few ingredients. Here is a simple recipe for this mouth-watering snack.
Ingredients:
- Rice flour – 2 cups
- Fried gram flour (Pottu kadala maavu/Putnala pindi/Roasted bengal gram flour) – 1 cup
- Red chilli powder – 1 tsp(or according to taste)
- Butter – 4 tbsp
- Ajwain seeds (Omam/Vaamu/carom seeds) – 2 tsp
- Sesame seeds (Ellu/Nuvvulu) – 2 tbsp
- Cooking oil – 300 ml
- Salt – as needed
- Water – as needed for a firm dough
Method:
- Use a sieve to filter the rice flour and Fried Gram flour (bhuna chana/dhaliya flour). Fried gram flour can be made by simply grinding the Fried Gram in mixie as a fine powder.
- Then add salt, ajwain seeds, sesame seeds and chilli powder to it.
- Mix all these ingredients with lukewarm water and add the butter to it while mixing.
- The consistency should be like chapathi or puri mix. It should be hard enough to take in hand and put in the mould. But it should be soft to touch.
- Put medium sized holes plate in the mould to get the muruku shape in as long needles.
- Heat oil in a deep bottomed pan and put the stove on a medium flame.
- Press the batter out of the mould and drop the muruku in oil.
- Let the muruku fry till you see all the bubbles in the oil subside around it. This means the muruku is ready and you can take it out of the oil.
- Drop the muruku on a tissue paper and let the oil drain away.
- Enjoy this tasty snack any time of the day!

- We can even use soaked rice to make the rice flour to be used in this recipe. Soak the rice for 3 hours and grind it as you do for dosa batter with the same consistency and the rice batter will be ready.
- You can directly mix the fried gram flour to it without adding water and you will get the right consistency to make the murukus.
- You can add red chillies while grinding the rice, instead of adding chilli powder!
